View Full Version : Corn on the cob help

Hi! My husband and I went to Chili's and his dinner came with corn on the cob. They corn practically wanted to just fall off the cob. When I cook corn on the cob it does not work out that way. I don't know if I am not boiling it long enough or what. Can someone please tell me the secrets?

I don't know about falling off the cob, but I do know that you shouldn't salt the water you boil the corn in, as it toughens the kernels.

I have another corn tip, it doesn't have anything to do with the texture, but it's a neat one. When you're serving corn on the cob, it can be messy for everybody to butter their corn at the table. So what you do is...while the corn is still in the hot water, remove from heat, and drop a few tablespoons of butter in the water, and let it melt. Fat will float on water, so the butter will stay at the top. Then, using tongs, slowly pull out a piece of corn, and it will get a good even coat of butter.

I agree with not salting the water.

As for the corn at Chili's, I have always found it to be overdone and too soft (almost mushy). There is a fine line I imagine from cooked well and overcooked. I would play around and cook yours a bit longer. the other bit of news on the Chili's corn (I worked there as a teenager) is that they tend to nuke it before serving too. That might have made a difference too.

I put a little lemon juice in my water while doing corn on the cob but that is mostly because it helps the color a little lol.

Corn can get tough when you over-boil it too. I think boiling time is 3 mins. That's dropping the corn into water that is already boiling. And only add 1 ear at the time so the water doesn't stop boiling.

So that is for fresh corn on the cob. 3 min each. I appreciate everyone's help. That is what I love about the grocery game message board there are always answers to needed questions.

Hey for everyone who likes to decorate cakes. There is a show called bake decorate celebrate you can figure out the rest to go to the site and check it out to see if it comes on your local stations. I love to watch it.

That is fresh corn, but you can have more than one ear in the pot at the time. Just put them in one at the time so the water doesn't stop boiling.

I love to make chili lime corn on the cobb. It's a Rachel Ray thing, but you take the corn, roll it in butter, sprinkle it with chili powder, and then squeeze fresh lime juice on it. It is SOOO YUMMY!

According to my Betty Crocker cookbook (and I always follow this!):

Place ears in enough unsalted cold water to cover. Add 1 tablespoon sugar and 1 tablespoon lemon juice to each gallon of water. Heat to boiling. Boil uncovered 2 minutes; remove from heat. Let stand uncovered 10 minutes before serving.

Also: refrigerate unhusked corn until ready to use. Cornis best when eaten as soon after picking as possible. Husk ears and remove silk just before cooking.

I only buy corn that's labeled "sweet" or the yellow and white kind, usually from a reputable road side stand or flea market here in town.

We also grew corn last year in our garden! It was theeee bessst!

Those are GREAT tips everyone! I have one for the easier buttering idea. Butter a piece of bread and then roll the cob on the bread. Probably everyone knows this but it never hurts for reminders! I love finding tips/ideas here that I'm like, "Oh yeah!"
