I know there are a lot of bakers on the board.
I am looking for and quick and easy cookie recipe for our annual cookie exchange. I have to make 12 dozen. Please no choc.chip, oatmeal or your normal cookie recipes. I always try to make something on the different side, cookies that you normally would not make.
I thought you all may have some good recipes you would be willing to share.

I made them for a cookie exchange a few years ago & everyone liked them. HTH



Toffee cookies - tastes like a Heath Bar

INGREDIENTS

* 35 soda crackers ( I used Club Crackers)
* 1 cup butter
* 1 cup semisweet chocolate chips
* 3/4 cup finely chopped walnuts
* 1 cup packed brown sugar

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C). Line a 15 x 10 inch baking pan with foil and grease it well. (I used Reynolds Release) Line the pan with soda crackers.
2. In a medium saucepan, melt the butter. Add the brown sugar and cook stirring it until it dissolves. Bring to a boil and cook about 3 minutes, stirring constantly. Immediately pour mixture over the soda crackers.
3. Bake for 3 to 5 minutes or until the mixture starts to bubble. Spread the chocolate chips over the hot cookies. Let set for a minute. Spread the chocolate evenly. Sprinkle with nuts. Let cool, then cut into bars.
I have also made them without the chocolate & they were good also

Lemon Ricotta Cookies makes 4 dozen, you'd need to triple to make your 12 dozen

1/2 c butter, softened
1 1/2 c sugar
2 eggs, lightly beaten
2 1/2 T fresh lemon juice
1 T grated lemon peel
1 c ricotta cheese
2 c flour
1 t baking powder
1 t salt

Instructions:
Cream the butter with the sugar until fluffy. Beat in the eggs, lemon
juice and lemon peel. Add ricotta cheese, beating well. Sift the dry ingredients together, add them and mix thoroughly. Drop by the
teaspoonful onto greased baking sheets - spacing the mounds well apart.
Bake in a preheated 400 degree oven for about 15 minutes, or until
the cookies are lightly browned. Lemon extract may be added to make the cookies more lemony. These are pretty when dusted with powdered sugar or drizzled with a glaze.

Lemon is a favorite of mine and the Toffee ones sound great too. I will have to give them a try.

Chris, thank you so much for posting the toffee bar recipe!! I made these 3 years ago for a cookie exchange and have no idea where the recipe came from. The ladies from church are STILL asking me if I have found the recipe. Yours sounds very close to what I made. I'm going to print it now and hand it out next Sunday!! THANK YOU for helping me end the cracker cookie mystery!! :D

Here is a real good lemon cookie recipe I found a few years ago at allrecipies.com

Lemon Sugar Tea Cookies
INGREDIENTS

* 3/4 cup butter
* 2 cups white sugar divided
* 1 egg
* 2 tablespoons corn syrup (I've made them without when I didnt have any & they were fine)
* 1 teaspoon lemon extract (I use 2 tsp)
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon baking powder
( I also add 2 or 3 drops of yellow food coloring)

DIRECTIONS

1. In a medium bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in egg, corn syrup, and lemon extract. Stir in flour, baking soda, and baking powder. Cover dough, and chill in the refrigerator at least 1 hour.
2. Preheat oven to 325 degrees F (165 degrees C). Line a cookie sheet with parchment paper. Roll chilled dough into walnut sized balls. Roll balls in remaining sugar, and place on the prepared cookie sheet.
3. Bake 12 minutes in the preheated oven, or until lightly browned.

This is a super easy and very cute cookie that my kids ask for every year when I do my holiday baking, only there's not really any baking involved and I bet you probably have most of these items stockpiled in your pantry.

Holly Cookies

32 Lg Marshmallows
1 stick margarine
2 tsp green food coloring
2 tsp vanilla
4 1/2 cups Frosted Flakes
Red Hots

Melt margarine & marshmallows over low heat. Once melted add food coloring and vanilla and blend. Stir in the Frosted Flakes, then drop spoonfuls onto wax paper. Decorate the top with 3 red hots per cookie to resemble holly berries.

Here's another one that is a family favorite, but there are alot more steps.

Candy Cane Cookies

1/2 cup softened butter or margarine
1/2 cup shortening
1 cup confectioners sugar
1 egg
1 1/2 tsp almond extract
1 tsp vanilla
2 1/2 cups Gold Medal Flour
1 tsp salt
1/2 tsp red food color
1/2 cup crushed peppermint candy
1/2 cup granulated sugar

Heat oven to 375. Mix thoroughly butter, shortening, confectioners sugar, egg and flavorings. Blend in flour and salt. Divide dough in half; blend food color into one half.

Shape 1 tsp dough from each half into a 4 inch rope. For smooth, even ropes roll them back and forth on a lighlty floured board. Place ropes side by side then press together lightly and twist. Place on ungreased baking sheet then curve top down to form the shape of a candy cane. Complete cookies one at a time.

Bake about 9 minutes or until set and very light brown. Mix candy and granulated sugar. Immediately sprinkle cookies with candy mixture; remove from baking sheet.

Makes about 4 dozen cookies.

These are a little more work, but very cute and tasty...this is the other cookies they ask me to bake every year.

Here is a super easy one that will use up some free cookie pouches! I get lots of requests for this clever cookie.

Peanut Butter Cup Cookies

1. Make one batch of PB cookie dough as per directions on pouch.

2. Roll dough into 1-inch balls and place one ball in each section of mini-muffin tin.

3. Bake as per package directions.

4. Press an unwrapped Reece's Peanut Butter Cup into the center of each cookie so that cookie forms a crust around the cup.j

5. Allow to cook in the muffin tin until crusts are firm. Enjoy!

SUPER easy tea cookies:

1 package tea biscuits (I love the Annie's chocolate mint cookies at Christmas Tree shop)
Chocolate Chips
Chopped Pecans or Walnuts

Melt the chips slowly. Spread a nice coating on top of cookie and sprinkle with chopped nuts. Done!
They're very pretty. I brought these to a friend a few months ago and didn't mention how I made them. She has taken classes at the culinary intitute and is a very fine cook. A few days later, she begged me for the recipe for the "exquisite tea bisquits".
