I do whole chickens in the crock pot all the time.
Sprinkle with herbs and stuff a half lemon in the cavity. (and I do not use any liquid)

I vary the herbs depending on my mood:
garlic & tarragon
garlic, onion, oregano, & sometimes basil
garlic, red pepper, cumin, cilantro
garlic, onion, sage and thyme
garlic & rosemary

gee I guess I use garlic a lot

It never dawned on me to use my crockpot for whole chickens... They were on sale a couple weeks back for .49 a pound so I got 3 (all that was left) and cooked all of them in the oven and put the meat in the freezer.. SOOO good!! I will definately try to crockpot method next time... Thanks for asking cause I would have never thunk it!!

Ok so I had to come back to this thread to let you know that the chicken that came out of the crockpot last night was divine!

Next time I will add a little liquid though, since the drippings were burnt on the bottom of the crock by the time the chicken was done and the foil balls were also stuck to the crockpot. Other than that, I was happy with the outcome!

Whoever said the chicken will fall apart when taking it out, was exactly right! I had to use turkey lifters to get it out in one piece. Then I just let it cool a bit and pulled the bones out of the chicken. They came right out, then I pulled off the skin (which was a little crispy!) and put the meat into the fridge to use tonight for chicken and dumplings.

Next time you could put some water or chicken broth in with some diced celery and onions. Skim the fat and you have your stock for chicken and dumplings.

I put a whole one in last night for dinner, I used the sticky chicken recipe from the crockpot thread-- the whole chicken was eaten! I was a little disappointed that they ate the whole thing because I was wanting to shred some of the chicken for quesadillas today.

I have done this many times with the foil in the bottom. It is wonderful crispy on the outside juicy on the inside.
