We bake with peppermint patties in the middle. My family loves them.

Pour half batter in 8x8 pan.
Lay 2 large Hersheys Symphony Bars across top.
Add remaining batter.
Bake as usual.
YUM.

A jar of icecream caramel, or mini-marshmallows and a dusting of graham cracker crumbs come to mind.
I also have used a jar of frosting and sprinkles on a batch that disappeared at the church picnic among 3- 4 other batches. People love desserts with sprinkles. That was cheap and easy.

I add chocolate fudge ice cream topping, about 3/4 of a cup (I just dump it) and chocolate chips to the batter, it makes them taste homemade. Sometimes I will add some leftover strong coffee to the batter, we love the mocha taste it makes, sometimes I add coffee to chocolate frosting for the top, sooo yummy!

I usually bake mine in the 9X13 pan then divide the pan in thirds. 1/3 choc chips, 1/3 rainbow sprinkles & 1/3 peanut butter chips. I just sprinkle them on the top and cook as usual. You can use any topping you prefer; mini marshmallows, nuts, etc. Then you have a choices available for everyone in one batch.

For the "family size" brownie boxes, I saw a blog by the woman who does all the books on doctoring cakes and tried her solution -- instead of the 1/2 c oil and water suggested on the box, mix in just 1 stick (1/2 c) of very softened butter. I also added some chopped up chocolate (halloween candy) and a little instant coffee. They were the best brownies I'd ever made from a box.

The absolute best brownies.... are ones that someone else makes! Ha ha. Lately DH has been our resident brownie maker - he seems to like to do it. All he does is follow the directions on the box and doesn't doctor them up at all... but I swear they taste wonderful every time

Peanut butter cups? I never thought of that. YUM! Sometimes I mix two different kinds to make a big batch and add chopped nuts. Maybe frosting and maybe not. That is as creative as I get. Mixing the one with walnuts with the one with the caramel swirl is DH favorite.
