Wow, there was a caterer on our local news station baking these brownies using a mix as the base. She used a round pan to bake it in. Looked so fancy and yummy!


Nutty Caramel Brownies
1 tsp vegetable oil
1 pkg brownie mix (plus ingredients to make cake-like brownies)
3/4 cup packed brown sugar, divided
2 cups miniature semi-sweet chocolate morsels, divided
1 cup salted mixed nuts, chopped, divided
5 rolls (1.7oz ea.) milk chocolate-covered chewy caramels, unwrapped, divided (40 pieces total)

Preheat oven to 375 F. Lightly brush baking pan with oil. In a bowl combine brownie mix, water, oil eggs and 1/4 cup of the brown sugar; mix well. Fold in 1 &1/2 cups of the chocolate morsels; pour batter into pan, spreading evenly using a scraper.

Combine 1/2 cup of the nuts and remaining 1/2 cup brown sugar; sprinkle evenly over brownie batter. Bake 20-22 minutes or until wooden pick inserted in center comes out clean.

Meanwhile, using a utility knife cut 16 caramels into quarters. Remove pan from oven. Immediately press remaining 24 caramels evenly into brownie. Sprinkle quartered caramels and remaining nuts over brownies. Place 1/2 cup chocolate morsels in a small microwave-safe bowl; microwave on HIGH 1 minute or until melted, stirring after each 20-seconds interval. [she added a little vegetable oil as she melted the chocolate to make it shiny and easy to drizzle] Drizzle melted chocolate evenly over brownies. Cut into squares; serve with ice cream if desired.

I swirl softened cream cheese in it before baking. It makes cheesecake brownies.

I use melted butter instead of oil and add a splash of vanilla.
